Overview

The Waiheke Butcher is Waiheke’s brand new butchery, bringing back old roots of a 1900’s style butchery with a modern take, serving a wide range of meats.

The Waiheke butcher is located in the same building as Humblepie Village Butchery which sadly closed in 2025 after being a waiheke staple for 20 years. They are currently renovating the building but have announced their opening to be December 10th 2025.

The owners of The Waiheke Butcher are French foodies and locals Wade, Lisa and Phillippe, following in their great-grandfathers footsteps of village butchers in the 1900’s they want to bring back the old style butchery nostalgia that has slowly vanished over the years with supermarkets, when you can walk into a butcher and select a fresh cut of meat wrapped in butchers paper. This is them opening their first butchery in 2025, in a site at Oneroa village that has been a butcher for a hundred years.

Their partner Philippe is a third generation Charcutier, 600 years of quality craftsmanship, love and respect for the animals and ethical farming practice.

Since 2013 Wade and Lisa have been passionately involved in creating handmade foods and food brands – fresh pasta, bakery, pies and of course L’Authentique’s pate and sausages.

Their first kiwi food enterprise L’Authentique is the key inspiration in helping them develop The Waiheke Butcher. Which you may have tried L’Authentique’s delicious flavorful meats before purchased from Woolworths, RAW, My food bag and other food markets.

I’m not a massive fan of Sausages but the L’Authentique brand certainly have me going back for more.
